How Honey Kills Bacteria
Raw honey possesses a unique combination of traits that make it deadly to bacteria:
- High Osmolarity: Because honey is highly concentrated in sugar and low in water, it draws moisture out of bacterial cells through osmosis, dehydrating and killing them.
- Hydrogen Peroxide: Bees add an enzyme called glucose oxidase to honey. When honey touches the moisture of a wound, this enzyme slowly releases hydrogen peroxide—a powerful antiseptic.
- Acidic pH: Honey's natural acidity prevents bacterial growth.
Treating Minor Burns and Scrapes
