Because we are so accustomed to highly processed foods that look exactly the same from the day they are bought until the day they expire, we often panic when natural foods change appearance. Raw honey is a living, breathing product of nature. If you store a jar of NIYANTA honey for a long time, it will evolve.
Crystallization and Color
The most obvious change is crystallization. The honey will transform from a runny liquid into a thick, spreadable solid. Additionally, the color of the honey will naturally darken over time, and its flavor may become slightly stronger or more robust.
Enzymatic Shifts
Chemically, the active enzymes continue to slowly break down complex sugars. If stored properly in a cool, dry place, these changes do not indicate spoilage. Like a fine wine, pure honey simply matures, maintaining its safety and nutritional integrity indefinitely.
