The Shelf Life of Niyanta Honey: Storing it During Indian Monsoons

We have established that pure, raw honey never truly expires under normal conditions. However, the intense humidity of the Indian monsoon season (especially in coastal cities like Surat) introduces a unique threat to your pantry: excess moisture.

The Hygroscopic Danger

Honey is highly hygroscopic, meaning it acts like a sponge for moisture in the air. If the moisture content of your honey rises above 20%, the natural, dormant yeasts present in raw honey will wake up and begin to multiply. This leads to fermentation, causing the honey to smell sour, bubble, and taste like alcohol.

Monsoon Storage Rules

  • Keep the Lid Tight: The most crucial rule. Ensure the lid of your glass jar is screwed on tightly immediately after every use. Never leave the jar open on the counter.
  • Zero Wet Spoons: A single drop of water from a wet spoon can trigger fermentation. Always use a bone-dry spoon.
  • Avoid the Fridge: It is tempting to put honey in the fridge during the humid summer-monsoon months, but this will rapidly cause crystallization. Keep it in a dry cupboard away from the stove's steam.
